Dr. Abhishek Dutt Tripathi is an Assistant Professor in the Department of Dairy Science and Food Technology, Institute of Agricultural Sciences, Banaras Hindu University, India. He has done his M.Tech. and Ph.D in Biochemical Engineering from Indian Institute of Technology, Banaras Hindu University, Varanasi. He has published 54 research papers and articles in journal of national and international reputes. He has also published 2 books, 2 laboratory manuals and more than 8 book chapters.

Dr. Kianoush Khosravi Darani is a Professor at the National Nutrition and Food Technology Research Institute of Iran. She has more than 20 years of teaching and research experience. She has published more than 125 research papers in journals of national and international repute. 

Dr. Dinesh Chandra Rai is a Professor and Head of the Department of Dairy Science and Food Technology, Institute of Agricultural Sciences, Banaras Hindu University, India. He has more than 25 years of teaching and research experience in the field of dairy science and technology. He has published more than 120 research papers, 05 manuals and 16 book chapters. 

Veena Paul is a DST-INSPIRE Junior Research Fellow at Banaras Hindu University, India. She received her master's degree in Food Science and Technology from Institute of Agricultural Sciences, Banaras Hindu University and got the first rank in master's degree and awarded the gold medal. She has published several research papers in peer-reviewed national and international journals. She has published several book chapters with reputed publications such as Springer.
